Few desserts capture the essence of summer like homemade vanilla ice cream. This timeless favorite is rich, creamy, and incredibly smooth, making it a perfect indulgence.
With only five ingredients and minimal effort, crafting this French-style ice cream becomes a delightful experience.
2 cups heavy cream (480ml)
¾ cup whole milk (180ml)
½ cup granulated sugar (100g)
1 split vanilla bean (seeds scraped) or 2 teaspoons vanilla extract
5 large egg yolks
Dairy: Heavy cream and whole milk are essential for the base, providing richness and a smooth texture. Using high-quality dairy ensures a flavorful result.
Sugar: Granulated sugar sweetens the mixture perfectly, creating a balanced taste.
Vanilla: Whether it’s a split vanilla bean, vanilla extract, or vanilla bean paste, the choice affects the flavor profile. The flecks from vanilla beans add visual appeal and a robust taste.
Egg Yolks: These define French-style ice cream, offering a creamy texture. High-quality egg yolks enhance the custard's richness.
Combine heavy cream, whole milk, sugar, and vanilla in a medium saucepan. Heat gently over medium flame until the sugar dissolves and the mixture emits steam. Avoid boiling.
In a separate bowl, whisk egg yolks until smooth. Slowly temper them by adding ½ cup of the warm milk mixture, whisking continuously.
Blend the tempered egg yolks into the cream mixture. Cook over medium heat, stirring with a rubber spatula, until thick enough to coat the back of a spoon. The temperature should reach 180°F.
Strain the custard through a fine mesh strainer into a bowl to remove solids. Cool quickly over an ice bath, then refrigerate for several hours until thoroughly chilled.
Pour the chilled mixture into a frozen ice cream maker. Churn according to the manufacturer’s instructions. Once done, transfer to a freezer-safe container, cover tightly, and freeze until firm.

Temper the eggs: Gradual warming ensures smoothness without scrambling.
Scrape the sides: Use a spatula to prevent burning or overcooking.
Strain the mixture: Ensures a silky consistency by removing any curdled bits.
Add a pinch of salt: Enhances the vanilla flavor.
Vanilla ice cream pairs beautifully with fresh fruits, warm caramel sauce, or crumbled brownies. It also complements desserts like apple pie, blueberry crisp, or strawberry cobbler.
To maintain quality, store in an airtight container in the freezer for up to a month. Pressing a layer of wax paper or plastic wrap onto the surface prevents ice crystals from forming.
Enjoy this delightful homemade treat as a standalone dessert or with your favorite toppings for an unforgettable summer indulgence!
